With no official confirmation regarding Infinity Nikki multiplayer, it's hard to say whether the dress-up game will have crossplay.
If it's anything like other recent successful gacha games, such as Genshin Impact and Zenless Zone Zero, then hopefully crossplay will be a functionality if co-op is available. Even if crossplay doesn't arrive on release, it could also potentially be added in at a later date.

We do know that Infinity Nikki does have cross progression between platforms, meaning your own progress is saved between PC, PlayStation 5, and mobile devices.
Cross-platform progression was available to players invited to participate in the most recent Infinity Nikki beta, which is how we know the feature will be available at launch.
